The Barolo Riserva Ai Fondatori 2016 by Roberto Sarotto is one of the most promising vintages, thanks to ideal climatic conditions that favored the optimal ripening of Nebbiolo grapes. This wine, produced in the prestigious vineyards between Barolo and Novello, is a tribute to the Sarotto family tradition and its founders. Vinification takes place with fermentation in temperature-controlled stainless steel tanks, followed by 36 months of aging in the world's largest oak barrel. In the glass, it presents a ruby red color enriched with orange reflections. The bouquet is complex and seductive, with notes of ripe red fruits, cherry, and plum, accompanied by spicy hints of vanilla, tobacco, and a touch of leather and licorice. On the palate, the Barolo Riserva 2016 offers a powerful and harmonious structure, with robust and well-integrated tannins and a surprising freshness that enhances its elegance. The finish is long and persistent, with a lingering aftertaste that recalls the fruity and spicy notes perceived on the nose. Ideal for accompanying structured dishes such as braised meats, game, and aged cheeses, this Barolo is perfect for celebrating special moments or for aging in the cellar for the next twenty years.
