The Vespolina Colline Novaresi Coda Rossa DOC by Ioppa is a wine that enchants the senses right from the first glance. Its color is a deep ruby red with purple reflections. On the nose, floral notes of violet and rose are balanced by the typical balsamic nuances of the grape, along with hints of black pepper and flint. On the palate, the wine is promptly soft and balanced, supported by good acidity and flavor. The tannic finish is clear, pleasant, fine, and persistent. Produced with 100% Vespolina grapes, the wine undergoes 7 to 10 days of natural fermentation in temperature-controlled stainless steel vessels, followed by 12 months of aging in steel and several more months in the bottle. Ideal for pairings with Piedmontese salami, rich and flavorful pasta and rice dishes, and grilled meats.
