The Asti Extra Dry Pianbello, known as "Segreto", is made with White Moscato grapes from vineyards located in Canelli, Loazzolo, and Valdivilla (S. Stefano Belbo). Harvesting takes place in mid and late September, followed by gentle pressing of the grapes, decantation of the must, and conservation at controlled temperature. Aging occurs in stainless steel tanks, with a second fermentation in the summer following the harvest. This process creates a sparkling wine with fine bubbles, enriched with complexity and harmony due to a 4-6 week period of resting on the lees with daily stirring. The wine features a light straw-yellow color with greenish tints, fine and creamy foam, and a fine and persistent perlage. The aroma is characteristic and delicate, with pleasant aromatic and citrus notes, reminiscent of Moscato grapes. The taste is warm and creamy, savory, fresh, and pleasantly soft. It is recommended for appetizers, light and delicate first courses, and excellent as an aperitif or paired with typical Piedmontese desserts.
