The Pecorino grapes are carefully handpicked and delicately processed, beginning with a gentle pressing followed by thermo-conditioned fermentation in stainless steel tanks, isolated from oxygen and in close contact with fine lees for extended periods. This method enhances the purity and freshness of the fruit, displaying a bright straw yellow color with greenish reflections. The bouquet is rich and refined, with elegant notes of melon, mango, and citrus flowers.
