Wine of the Month
Piemonte Bianco "Flores" DOC 2024 Low Alcol – Roberto Sarotto
PIEMONTE BIANCO NATURAL LOW ALCOL "FLORES" BY ROBERTO SAROTTO
Piemonte Bianco DOC "Flores" – Roberto Sarotto
A white wine that redefines balance: fresh, light, and purely expressive. Piemonte Bianco DOC “Flores” by Roberto Sarotto is the only still DOC wine in Italy with less than 8% alcohol, made entirely from Cortese grapes using only traditional methods—no dealcoholization or water added.
Early harvesting preserves vibrant acidity and keeps sugar levels in check. Fermentation is carefully halted to retain natural residual sweetness and low alcohol. A soft microfiltration stops fermentation, followed by cold aging in stainless steel to ensure freshness and clarity.
It presents a bright straw-yellow color with aromas of citrus peel, green apple, and floral hints. On the palate, it's lively and clean, with white peach notes and subtle minerality that extends the finish. Despite its lightness, it never lacks character.
Ideal for light aperitifs, seafood dishes, fresh vegetables or simply to enjoy a refined, refreshing sip. “Flores” is a contemporary take on Piemonte whites—authentic and full of charm.
