The Gavi del Comune di Gavi by Fontanafredda celebrates the uniqueness of the Gavi territory through a sublime expression of the Cortese grape, endowing this white wine with an identity marked by elegance and a deep connection to its roots. The result of carefully selected grapes, this wine embodies an ideal of balance and finesse, carrying the richness of history and craftsmanship that are evident in every sip. The vinification follows a meticulous process that begins with gentle pressing of the grapes, followed by immediate separation of the must from the skins to maintain the integrity and vibrancy of the aromas. Fermentation occurs at controlled temperatures, between 18 and 20°C, in stainless steel tanks, thus preserving the freshness and clarity of taste notes. Afterwards, the wine matures on fine lees for a period of 2-3 months, a process that enhances its aromatic complexity, before a cold stabilization pre-bottling. Visually, the Gavi del Comune di Gavi presents an elegant straw yellow color enriched by greenish hues, heralding its liveliness. On the nose, it opens with a rich and seductive bouquet of acacia flowers, lemon, lily of the valley, and green apple, immediately inviting tasting. On the palate, it maintains a pleasant dryness, revealing a full and savory structure that exemplifies the perfect marriage between sapidity and minerality, leaving a lasting and enjoyable aftertaste. In terms of pairings, this Gavi proves to be extremely versatile and surprising.
