Fontanafredda's Alta Langa Limited Edition is a sublime expression of the Langhe hills, where winemaking mastery meets tradition and sustainable innovation. This DOCG sparkling wine, the result of the passion of a small group of producers who have aimed to create excellent bubbles since 1990, stands out for its blend of Pinot Noir and Chardonnay, grown at altitudes exceeding 250 meters above sea level, ensuring freshness and a distinctive aromatic bouquet. The winemaking process begins with the manual harvesting of grapes in crates of about 20 kg, followed by gentle pressing. The obtained must is then transferred to thermo-conditioned tanks for static settling, and then fermented at low temperatures (18-20°C) in stainless steel. After fermentation, the wine rests on fine lees for several months, during which the cuvée is created by blending selected wines from different vineyards. In spring, the second fermentation in the bottle takes place, followed by a period of aging on the lees for at least 30 months, in dark and protected environments, respecting the strict rules of Alta Langa production. This wine presents itself with a straw yellow color embellished with green reflections. On the nose, notes of honey, white peach, grapefruit, and basil stand out, while on the palate, it offers refined sapidity, with persistent bubbles and a sweet and prolonged finish. The wine's aromatic complexity and freshness are the result of a skillful blend of vineyards, located at an average altitude of 500 meters above sea level, and a minimum aging period of 30 months that enhances its elegance. Perfect as an aperitif, this wine also represents an excellent accompaniment to the entire meal, thanks to its distinctive personality and gastronomic versatility.
