Nero d'Avola, the protagonist variety, reflects the power and passion of the territory. The vinification includes a maceration of 15-20 days and maturation of 18 months in 500 liter tonneaux, followed by refinement in the bottle for 6-8 months. The dark and impenetrable ruby red color announces a bouquet of ripe fruit with tertiary notes of liquorice and sweet spices. On the palate, it has good acidity, rich, well balanced and long, with delicate tannins defined by time. Ideal with grilled red meats, mature cheeses and game stews.
