The Alta Langa Extra Brut by Marziano Abbona is a sparkling wine that stands out for its depth and elegance, offering a sophisticated experience for the palate. This wine is produced in Piedmont, Italy, utilizing a blend of Pinot Nero and Chardonnay grapes, which are carefully selected from vines with an average age of twenty-two years, located adjacent to the cellar. The vinification process involves a gentle pressing of the grapes to extract the free-run must, ensuring a yield of about 50%. The wine then undergoes racking and ages for six months before the tirage process in July, with the addition of selected yeasts that trigger re-fermentation in the bottle over 40-60 days at 14°-16°C. This Alta Langa Extra Brut does not undergo malolactic fermentation, preserving its crispness and freshness. It is refined on lees in the bottle for over thirty months, culminating in a dégorgement process without the addition of liqueur in March. The predominance of Pinot Noir over Chardonnay in the blend enhances the structure, aroma, and character, while the Chardonnay and extended aging on lees add substantial substance and creaminess. The result is a wine with a fine, persistent, and silky perlage that gently caresses the palate, refreshed by notable acidity and verticality. Its refined bubbles and nuanced bouquet, pairs exquisitely with delicate seafood dishes, enhancing the flavors of scallops or a classic lobster risotto, creating a symphony of taste that celebrates the elegance of both the wine and the sea's bounty.
