Cantina Moscone's Giovane Ribelle Brut is an elegant classical method sparkling wine produced in Monforte d'Alba with Nebbiolo and Chardonnay grapes. The manual harvest takes place on limestone, clay, and sandstone soils. The winemaking follows the Champenoise Method, with aging on the lees for at least 24 months and a further 6-month rest after dégorgement. This sparkling wine presents a straw yellow color and fine perlage, offering nose aromas of white flowers and fruits with notes of red fruits typical of Nebbiolo. On the palate, it is fresh and mineral, with a creamy bubble that provides persistence and harmony. Perfect for aperitifs and dishes based on fish and shellfish, as well as with fresh pasta and risotto dishes.
