The Barolo Paiagallo by Mirafiore, with its pure essence of 100% Nebbiolo, represents a true gem of oenology. This wine stands out for a carefully crafted aging process, starting with 12 months in barriques, followed by another year in 2-3 thousand-liter Allier oak barrels. This careful maturation allows the tannins to be refined without excessively enhancing the woody sensations, perfectly balancing the grape aromas with those conferred by the wood. After the period in wood, the wine is clarified, if necessary, to smooth out any residual roughness, ensuring a perfectly clear product. Subsequently, it is bottled and left to age for at least another year before being released onto the market. From an organoleptic point of view, the Barolo Paiagallo presents itself with a ruby red color embellished with garnet reflections. The bouquet is rich and enveloping, with distinctive notes of ripe plums, tobacco, mint, rosemary, cinnamon, and dried mushrooms. On the palate, the density of the tannins, tightly woven, gives a well-structured sensation, accompanied by softness and balance. As for gastronomic pairings, the Barolo Paiagallo pairs magnificently with intense and structured dishes. It is ideal with red meats, game dishes, and aged cheeses, where its complex notes and tannic structure can be fully appreciated.

Emanuele Alberto's vision, an entrepreneur of noble origins, revolutionized the wine world of the time with a modern approach to winemaking and a strong commitment to the community. Recently, Casa E. di Mirafiore has intensified its commitment to sustainability, achieving organic certification in 2018 and celebrating its first certified organic harvest. This orientation was further reinforced in 2022 with the publication of the first Sustainability Report and the acquisition of certifications for sustainable practices in its own 25 hectares in Serralunga, vegan products, and recognition as a "Historical Brand" by the Italian government, a sign of its historic contribution to the oenology of the Langhe, combining tradition and sustainable innovation.
