The Derthona Timorasso Scaldapulce by Borgogno is a DOC white wine originating from the hills of Tortona, specifically from the Scaldapulce vineyard in Monleale. This wine, a pure expression of 100% Timorasso, comes from an area exposed to southwest, south, east at 250 meters above sea level, characterized by a clay-limestone soil. The planting density reaches 5,000 vines per hectare, with manual harvesting towards the end of September. The Derthona Scaldapulce stands out for its deep gold color with green reflections, announcing on the nose a complexity of mineral notes, while on the palate it reveals savory, full-bodied, structured, and of great persistence, heralding an excellent aging potential. The winemaking process involves cold maceration in steel, followed by static decantation always in steel and spontaneous fermentation in cement tanks at 17°C for 25 days. Aging continues in steel on the lees for 18 months to enhance its vertical notes, followed by an additional 7 months of bottle aging. From an organoleptic point of view, the wine presents an intriguing bouquet, with fruity aromas of pear and peach, floral hints of acacia and hawthorn, honey, and hydrocarbons. On the palate, it manifests itself as dry, expansive, warm, and soft, with impeccable balance between alcohol content and organic acidity, resulting in a well-balanced and very persistent body. This wine pairs magnificently with rich dishes, such as Piedmontese cuisine appetizers, fish, such as anchovies and scallops, but also with full-fat cheeses.

Cesare Borgogno's innovative vision in the 1920s, which expanded production and began exporting wines abroad, positioned Borgogno as an international reference point in the wine industry. Today, Borgogno manages 39 hectares of land, 31 of which are vineyards, with cultivations ranging from indigenous varieties such as Nebbiolo, the protagonist of their renowned Barolo, to minor varieties such as Dolcetto, Barbera, Freisa, Riesling, and Timorasso, the latter being the focus of a revitalization project. Borgogno's philosophy, which combines respect for tradition with an eye for sustainability and innovation, is reflected in its wines, appreciated both for their traditional style and long-term aging potential, making them favorites among Italian wine enthusiasts and collectors.
