Amo’ Spumante, crafted by the esteemed Cantina Vecchia Torre, is a distinguished sparkling Salento Bianco IGP wine, born from a blend of Chardonnay and Vermentino grapes. These vineyards flourish in the region's unique alluvial soils, characterized by a medium texture and interspersed with limestone patches, ideal for nurturing these grape varietals. The vinification process embraces a soft pressing technique followed by fermentation in stainless steel vats, carefully maintained at cool temperatures of 15-16°C. Employing the Charmat method, the wine undergoes a secondary fermentation in autoclaves for a duration of 40-60 days at a controlled temperature of 13-14°C, complemented by an extended yeast contact period of 3-4 months. It presents a delicate straw yellow hue, accented with subtle greenish reflections. The aromatic profile is strikingly intense, weaving together nuances of citrus, floral elements, sage, and an essence of Mediterranean herbs. On tasting, it reveals an exquisite freshness and elegance, with a soft, refined perlage, creating a harmonious and savory experience, enriched by a delightful minerality. This wine is an excellent companion to a variety of seafood and shellfish culinary creations.
