Lajella Offida Passerina, produced by Cantina dei Colli Ripani, is an authentic expression of the Ripatransone territory. This wine, made exclusively from Passerina grapes, comes from a careful manual harvest conducted after mid-September. The vinification process occurs without skins, with must debourbage and controlled temperature fermentation in stainless steel tanks, where the wine also matures in the absence of oxygen in contact with fine lees for extended periods. This vinification method preserves and enhances the natural flavors of the grape. On the nose, Lajella opens with delicate notes of green apple which evolve into fragrances of acacia and broom as it matures. The color is an elegant soft straw yellow. On the palate, the wine is fruity and pleasant, with a persistence that invites another sip. Ideal for pairing with fish dishes and light first courses, this wine brings a piece of Offida to the table, celebrating the culture and language of its region.
