The Briosè Vecchia Torre is a distinctive demi-sparkling white from the Salento IGP region, crafted by the Vecchia Torre cooperative winery in Leverano, Lecce. This wine is a harmonious blend of Bombino Bianco, Chardonnay, and Trebbiano grapes, cultivated in alluvial, medium-textured, and somewhat stony soils. The vinification process involves de-stemming and gentle pressing of the grapes. After static clarification, the must is transferred and fermented with selected yeasts at a controlled temperature of 16-18°C. The Charmat method, a short secondary fermentation in pressurized tanks, is employed for about three months to create its effervescence. Briosè Vecchia Torre showcases a pale straw yellow color with a fine and reasonably persistent perlage. Its bouquet is fruit-forward, enhanced by delightful hints of bread crust and yeast. On the palate, it presents a full, fresh profile with a soft finish. This wine is recommended to be enjoyed young and pairs excellently with appetizers, pizzas, fish-based dishes, and white meats.
