The Offida Pecorino "Condivio" is a sublime representation of the Pecorino grape, cultivated in the lush hills of Offida. This wine is the result of meticulous selection of grapes, which, after manual harvesting, undergo gentle pressing. Fermentation occurs at controlled temperatures in stainless steel tanks to preserve the varietal aromatic characteristics, followed by a brief maturation on fine lees that enhances the overall profile of the wine. In the glass it stands out for its bright straw yellow color with golden reflections. At the nose offers a rich and complex bouquet, featuring aromas of green apple, pear, white peach, and floral nuances, accompanied by a delicate hint of almond. On the palate, the wine is elegant and structured, with a vibrant acidity that balances its rich texture. The fruity notes blend with pronounced minerality, leading to a long and pleasantly fresh finish. This Pecorino is ideal with rich fish dishes, such as stoccafisso all'anconetana or seafood risotto, and pairs beautifully with fresh goat or sheep cheeses, enhancing the variety and richness of flavors.
