The Grotte di Santità Ancestral Sparkling Wine is an exemplary creation from Cantina dei Colli Ripani, inspired by the prehistoric tunnels that crisscross the territory of Ripatransone. Produced exclusively from Sangiovese grapes handpicked in the first decade of September, this organic, sulfite-free sparkling wine is the result of a gentle pressing followed by an initial fermentation in temperature-controlled concrete tanks. The re-fermentation process takes place in the bottle, following the ancestral method, with an aging on lees for at least 16 months, which imparts a natural haze from the remaining yeasts. The color is a delicate powder pink, while the nose reveals vibrant grapefruit notes that evolve into hints of blood orange. On the palate, the wine exhibits a freshness that mirrors the olfactory sensations, characterized by a sour and minerally profile with good persistence. The finesse of the bubbles and the creamy texture make this sparkling wine a unique experience in its class.
