Cascina Chicco’s Cuvée Zero Rosé is a Metodo Classico sparkling wine made from Nebbiolo grapes vinified in pink. This elegant interpretation highlights the aromatic charm and finesse of one of Piedmont’s most noble varieties.
After a gentle pressing, the must undergoes primary fermentation in stainless steel at controlled temperatures to preserve its varietal freshness. The wine is then bottled for the second fermentation, followed by 30–36 months of lees aging, gaining complexity and balance.
In the glass, it reveals a pale pink color with onion-skin hues and a persistent fine perlage. The bouquet features wild strawberries, cherry, rose, dried orange peel, and sweet spices. On the palate, it is bright, fresh, and well-balanced, with red berry notes and a savory finish that adds depth and vibrancy.
Ideal occasions: ideal as an aperitif, and excellent with light starters, seafood, white meats, and fresh cheeses. A sparkling rosé made to toast special moments with elegance.

Cascina Chicco manages over 50 hectares of vineyards, spread across some of the most renowned areas of Roero and the Langhe, including Canale, Vezza d’Alba, Castellinaldo d’Alba, Barbaresco, and Monforte d’Alba. For four generations, Cascina Chicco has embodied the perfect balance between tradition and innovation. The Faccenda family has transformed an old farmhouse in the town of Canale into a cutting-edge winery, guided by a deep respect for the land. Vinification is tailored to each grape variety and the desired wine style. For white wines, the winery employs cryomaceration, a cold technique that enhances aromatic extraction, prevents oxidation, and brings out fresh, fruity notes. This process—cold maceration of the must with the skins—adds complexity, structure, and longevity to the wines. For red wines, longer macerations are used to achieve noble and delicate extractions. Aging follows in large oak casks and French oak barriques, highlighting the varietal and territorial character of each wine. This attention to detail continues in the underground cellar, a striking 5,000-square-meter space carved 28 meters deep into the hillside. Lined with terracotta bricks and gypsum crystals, it offers ideal conditions for aging—whether for traditional still wines or Metodo Classico sparkling wines made from Nebbiolo or Alta Langa grapes. Each label from Cascina Chicco reflects a distinct identity, shaped by vineyard work, enological sensitivity, and respect for time.
