The Riesling Trentino DOC - Cembra is a white wine that embodies the essence of the Cembra Valley in Trentino. Produced by the renowned Mountain Winery, this wine is a tribute to the hard work and dedication of local winemakers. The grape variety used is Rhine Riesling, grown in vineyards exposed to the south, southwest, and southeast at altitudes ranging from 500 to 650 meters above sea level. The soil of fluvial-glacial origin is very deep, clayey-loamy and fertile, offering excellent drainage and optimal biological fertility. The harvest takes place manually in late September or early October. In the cellar, the wine undergoes gentle pressing and brief maceration on the skins, followed by fermentation and aging in stainless steel tanks and a small part in French oak barrels. With a straw-yellow color, the wine releases intriguing aromas of ripe fruit, white peach, apricot, and candied fruit on the nose. On the palate, it is mineral and savory, with notable persistence and balance. This wine is ideal for pairings with white meats, fish, and vegetables, and lends itself beautifully to elegant dinners or special occasions.
