The Contessa Rosa Rosé Riserva, produced by Fontanafredda, is an excellence among Alta Langa DOCG sparkling wines, combining the elegance of Pinot Noir with the freshness of Chardonnay. The winemaking process begins with manual harvesting of the grapes, which are gently pressed after cold maceration, followed by fermentation in stainless steel at controlled temperature. Part of the Pinot Noir is left to macerate on the skins to enhance its aromatic profile. After fermentation, the wine rests on fine lees until spring, then undergoes a second fermentation in the bottle, enriched by the addition of a very special liqueur d'expédition: a small quantity of Barolo 1967, which gives a unique complexity to the final taste profile enriched and refined by the long rest on the lees for at least 60 months. The delicate pink color with onion reflections heralds an aromatic bouquet reminiscent of orange blossom, pomegranate, chinotto orange, and black plums, complemented by notes of ginger, nutmeg, lavender, basil, and pastry cream. The fine and persistent perlage and well-balanced acidity, with subtle sweetness, conclude with a mineral and savory taste sensation, ending with a citrusy aftertaste. This makes the Contessa Rosa Rosé Riserva an excellent companion for every course, capable of accompanying every moment of the meal with class and personality.
