The Moscato d'Asti Moncucco by Fontanafredda is a DOCG wine that stands at the pinnacle of sweet wines, embodying an example of excellence and uniqueness. Originating from the hill of Moncucco, renowned for its superior Moscato grapes, this wine is a true exponent of vivacity, with a complex aromatic profile and enticing creaminess, brilliantly balanced by a lively acidity that highlights its elegance and considerable aging potential. During vinification, the selected grapes are harvested at the peak of their maturity. Some are immediately pressed, while others undergo destemming and cryogenic maceration at 5°C for about 12 hours, a process that, along with gentle pressing, facilitates the extraction of the precious "flower must". Subsequently, the must is cold decanted. Fermentation occurs at 18°C and stops as soon as the wine reaches an alcohol content of 5.5%. Aging in steel, at a controlled temperature of 0°C, ensures the preservation of the wine's aromatic integrity and freshness. Upon tasting, the Moncucco reveals its magnificence: a straw-yellow color with golden reflections heralds a symphony of intense aromas, faithfully reminiscent of the scent of Moscato grapes. Echoes of ripe pear, white peach, honey, and flowers of acacia and lime, with hints of orange, sage, and lemon, make up a captivating and complex bouquet. In the mouth, its rich texture offers a full sip that masterfully harmonizes acidity and the lively petillant, culminating in a persistent aromatic aftertaste that brings to mind the brightness and warmth of the ripening Moscato grape. Perfect as a meditation wine or paired with a range of desserts, even the most sophisticated, Moscato d'Asti Moncucco proves to be an excellent ally to enhance sweetness and freshness in every sip.
