In the vinification process, the Dolcetto grapes undergo a meticulous crushing and destemming, followed by spontaneous alcoholic fermentation with indigenous yeasts. The fining process takes place in concrete and clay containers, which helps to maintain the wine's fruit-driven character and freshness.
