The "Cherie" Brut Spumante from Pianbello stands out for its superior quality, originating from a careful selection of Pinot Nero and Chardonnay grapes from the picturesque hills of Alta Langa. Managed with dedication by the winery in the territories of Canelli and Loazzolo, the vineyards provide an excellent raw material, harvested at the end of September. The winemaking of these grapes involves a gentle pressing, followed by must decantation and a carefully controlled fermentation at 14-15°C. The elegance of this sparkling wine is refined in stainless steel tanks, culminating with a foam formation in the summer following the harvest. The second fermentation, carried out in autoclaves according to the Charmat method at 16°C, achieves a pressure of 4.5 bar. During this period of 4-6 months, the spumante develops an extremely fine perlage, enriching itself with complexity and a surprising note of crusty bread. Visually captivating, the Cherie presents a bright straw color with greenish tints, accompanied by finely creamy foam and persistent perlage. On the nose, it reveals a distinctive and refined aroma, enriched with floral and mineral notes, delicate almond, and shades of crusty bread. On the palate, it offers a warm and enveloping taste, savory, fresh, and pleasantly soft, making it ideal to be enjoyed at a temperature between 4 and 6 °C. Perfect as an aperitif, the Cherie is an ideal companion for appetizers, fish-based dishes, light first courses, and delicate second courses.
