Palearum Vermouth di Torino is a distinguished concoction originating from the verdant hills of Nizza Monferrato, renowned for its meticulous selection of Moscato grapes that imbue the vermouth with a vivid straw hue and unmatched depth. The vermouth's profile is marked by an exquisite blend of aromatic herbs, elevated by a burst of citrus, making it truly stand out. On tasting, Palearum envelops the palate with a captivating sweetness that transitions into a complex, bitter finish, a testament to the innovative use of Nizza Monferrato's gobbo thistle seeds in the infusion process. Its secret formula hinges on the careful selection of aromatic herbs and spices, including gobbo thistle seeds, Common and Pontic Wormwood, fennel, among others, expertly blended with alcohol for around 20 days. The extracts are then harmoniously combined with Moscato, sugar, and caramel, and aged in steel vats for over 90 days. This meticulous process yields a vermouth that is filtered and ready to be savored, inviting you to discover and celebrate authentic flavors.
