The Barolo Fossati DOCG, crafted from 100% Nebbiolo grapes, is a prestigious embodiment of the rich winemaking heritage of Borgogno. Nestled in the heart of Barolo, the Fossati vineyard enjoys a south-eastern exposure, thriving on calcareous and clayey marl soil, with a slight sandy composition. This vineyard's unique terroir, coupled with meticulous cultivation practices, including a high planting density of 4,000 plants per hectare, culminates in the harvest towards the end of September and the beginning of October. The wine undergoes spontaneous fermentation with indigenous yeasts in concrete tanks, followed by an extended maceration period. It is then aged for four years in Slavonian oak casks, further maturing in the bottle for six months. This process imbues the wine with its distinctive ruby red hue, garnished with hints of fresh fruit and a subtle spiciness, creating a palatable freshness and refined tannin structure. Its robust structure and depth of flavor make it an ideal companion to hearty meat dishes, from traditional roasts to sophisticated braises, as well as a variety of cheese selections. Whether it's a formal dinner or a casual gathering, this Barolo enhances every meal with its distinctive elegance.

Borgogno is an institution in the wine world, with roots dating back to 1761 in the Langhe region of Piedmont. This historic winery has traversed centuries of Italian wine history, significantly contributing to the development of Barolo, known as the "King of Wines." Cesare Borgogno's innovative vision in the 1920s, which expanded production and began exporting wines abroad, positioned Borgogno as an international reference point in the wine industry. Today, Borgogno manages 39 hectares of land, 31 of which are vineyards, with cultivations ranging from indigenous varieties such as Nebbiolo, the protagonist of their renowned Barolo, to minor varieties such as Dolcetto, Barbera, Freisa, Riesling, and Timorasso, the latter being the focus of a revitalization project. Borgogno's philosophy, which combines respect for tradition with an eye for sustainability and innovation, is reflected in its wines, appreciated both for their traditional style and long-term aging potential, making them favorites among Italian wine enthusiasts and collectors.
