The Papa Celso Dogliani DOCG by Marziano Abbona is a distinguished red wine, embodying the essence and tradition of the Dolcetto variety from the Langhe region. This wine is a tribute to Celso Abbona, the father of Marziano, who meticulously planted each vine in the Doriolo vineyard, the sole source of its grapes. The vineyard's location and the age of its vines, over 60 years, contribute to the wine's remarkable balance of elegance, power, and harmony. In the vinification process, the Dolcetto grapes undergo a meticulous crushing and destemming, followed by spontaneous alcoholic fermentation with indigenous yeasts. This phase allows for an intimate contact between the juice and the skins in stainless steel tanks at controlled temperatures, ensuring the extraction of vibrant colors, rich aromas, and complex flavors. The fining process takes place in concrete and clay containers, which helps to maintain the wine's fruit-driven character and freshness. Before its release, the wine is bottled and then rests at a constant temperature to further develop its complexity and bouquet. Papa Celso showcases a rich and structured profile, with a symphony of red and black fruit aromas that are harmoniously balanced on the palate. A slight acidity and discreet tannic presence are beautifully enveloped by its fruity pulp, making it a versatile companion to a variety of dishes including pasta with ragu, white meats, and medium-aged cheeses. The Papa Celso Dogliani DOCG is not only a testament to the Abbona family's dedication to quality winemaking but also a reflection of the rich viticultural heritage of Dogliani.
