The Blanc de Blancs Alta Langa DOCG by Fontanafredda stands out as a distinct specimen of elegance and balance, resulting from the careful selection of Chardonnay grown on the hills of Castino. The union of white clays and limestone sands at an altitude of 600 meters, with an east-southeast exposure, gives this wine a unique character. The harvest of the grapes, carried out with meticulous care between the end of August and the beginning of September, precedes a vinification process that honors the grape's delicate nature: handpicked in small crates to minimize stress, then gently pressed. After a natural cold decantation, the must begins alcoholic fermentation. This is followed by a maturation period in steel until spring, preparing the wine for a second bottle fermentation that enriches it with a distinctive effervescence, creaminess, complexity, and aromatic intensity. With an aging of about 30-36 months on the lees, the Blanc de Blancs stands out for its fine and lasting perlage, displaying a straw-yellow color. The aroma is a tribute to the richness of the territory, with intense scents reminiscent of crusty bread, pastry, and dried fruit, enriched by subtle honey notes. On the palate, it maintains its promise of freshness, aromaticity, and a creamy texture, elegantly celebrating the excellence of Piedmontese winemaking. Excellent as an aperitif, its refined identity makes it a perfect accompaniment for a variety of dishes, especially fish-based or fried, elevating every meal with a note of sophistication.
